POLSON — It seemed like an ordinary Saturday morning at the Smith house. Smells of roasting lamb, herbs and vegetables wafted from the kitchen.
A plump apple pie sat on the buffet.
But on Jan. 22, Allrecipes.com’s "What’s Cooking" host Michael Ketchum, and videographer David Albright were in town to film Darlis Smith using her special recipe to prepare a leg of lamb.
Cooks who want a recipe have been able to access allrecipes.com on the internet for 13 years, but the site has expanded with Allrecipes.com‘s "What’s Cooking", launched in July of 2010.
“It’s all about home cooks,” Michael Ketchum explained, “not chefs, not haute cuisine.”
The home cooks selected are those whose recipes are popular on allrecipes.com, and Darlis is one of those cooks. After the lamb was popped in the oven, Darlis and her husband Daniel showed the men some of Lake County on a visit to Will and Jan Tusick’s sheep ranch. Will had provided the leg of lamb for Darlis to roast.
Since the Smiths' daughter Azia is one of the cheerleaders, the group stopped at Polson High School on the way back from Valley View, for a special Allrecipes cheer.
Back at the Smiths', Darlis checked the temperature of the leg of lamb to make sure it was done. Albright filmed as she served the lamb with roasted root vegetables — beets, potatoes, onions, turnips, carrots — and squash. The Smiths' other daughter Dayne folded napkins and set the table. To complete the local food theme, dinner included wine from the Mission Mountain Winery.
Darlis also made a Flathead cherry compote to complement the lamb. To top the meal off, Darlis baked one of her famous pies, made with local apples from the neighbors, a trade for some of her tomatoes.
Darlis confessed, “I’m afraid I wouldn’t be invited to many holiday dinners if I didn’t bring a pie.”
