Smokin’ on the Water, Brewfest draws large crowd

POLSON — Curls of smoke from the cookers and barbecues announced the third annual Smokin’ on the Water barbecue cook-off was beginning early Saturday morning.
Pit boss for Smokin’ Joe’s, Joe Santos, Jr., started cooking at 8 a.m. using his dad’s cooker. Joe and his crew served up falling-off-the-bone barbecued ribs, beans and coleslaw. This was Joe’s first cook-off although he works for the Confederated Salish and Kootenai Tribe’s fisheries and fries the fish for Mack Days.
Carol Swope from the Polson Volunteer Fire Department said her day began even earlier since they were loading cookers with pit boss Jack Clapp at 7 :30 a.m. The PVFD barbecued tri tip.
The Three Drunk White Guys team was cooking pork ribs for the contest. Attributing all his cooking skill to his 7th-grade home economics teacher, team member Mike Fouty prepared some spicy chicken and pineapple skewers for hungry customers.
Organizer La Nita Fitzpatrick said she was pleased with the crowd. All the tables were filled with diners during the lunch hour. Weather was perfect for the cook-off and Brewfest, which began at noon.
